these are the best books that I have read relating to baking bread
bread matters -by- andrew whitley this book not only contains a wide range of interesting recipes (mostly using sourdough/wild yeast starter) but also highlights the negative impact of mass produced or industrial bread (the use of unnamed/explained additives, the impact of bakers yeast on digestion and much more)
particularly good recipes:
caraway and rye (Russian style)
the tassajara bread book -by- edward espe browna wonderfully spiritual approach to bread and baking
helps you to appreciate how the energy flows from your hands into the dough (and from there into others...)

her simple directions are an excellent starting point
